These fun Christmas cookies are definitely going to be Santa’s favourite cookies! Made using our award winning Dromona butter making them extra soft and chewy.

Ingredients

  • 150g plain flour
  • 125g Dromona butter
  • 100g golden caster sugar
  • 75g light brown sugar
  • 75g rolled oats
  • 75g mixed dried fruit
  • 50g walnuts chopped
  • 150g white chocolate chips
  • 1 tsp vanilla extract
  • 1⁄2 tsp baking powder
  • 1⁄2 tsp salt
  • 1 egg

Made for sharing:

This recipe makes 24 cookies.

How It’s Done:

  1. Preheat the oven to 180°C and line a baking tray with parchment paper.
  2. In a bowl mix together the flour, baking powder, salt, and oats. Then fold in the dried fruit, walnuts, and chocolate chips.
  3. In a separate bowl, whisk together the butter and sugar until creamy, then beat in the egg and vanilla extract. Mix the dry ingredients with the wet ingredients together.
  4. Roll a tablespoon at a time of the dough into balls in your hands then place on the baking sheet, then squash down with a fork.
  5. Bake in the oven for 15 minutes, they will still be soft but lightly golden. Leave to cool for 5 minutes then remove to a wire rack to cool fully.
