Darragh’s Pancetta and Prawn Spaghetti

You will need a saucepan

Ingredients

  • 500g spaghetti
  • 240g raw king prawns
  • 200g diced pancetta
  • 300g cherry tomatoes
  • 1 diced onion
  • 4 cloves crushed garlic
  • 1 red chilli
  • 50g Dromona Butter
  • Small sprig of rosemary
  • Dromona Mild Grated Cheddar

How It’s Done:

  1. Add the onions into a pan on medium heat for around 5-8 minutes with a teaspoon of olive oil, then add garlic and cook for 2-3 minutes
  2. Place the pancetta into the pan and cook until crispy
  3. Add chilli, tomatoes, butter and rosemary and cover until the tomatoes are soft. This takes around 15 minutes
  4. Cook the pasta as per instructions
  5. Add the prawns to the sauce and cook for 3-4 minutes
  6. Drain the pasta and add to the sauce
  7. Mix and serve with the grated Dromona Cheddar
