Darragh’s Creamy Tomato Soup with Cheesy Soda Bread Croutons

A quick and easy homemade tomato soup with cheesy soda bread croutons. Perfect to fill hungry kids after school!

You will need a large saucepan and a blender.

Ingredients

  • 1 tsp olive oil
  • 30g Dromona butter
  • 1 onion, thinly sliced
  • 3 garlic cloves, crushed
  • 4 tins plum tomatoes
  • 200ml vegetable stock
  • 150ml double cream
  • 1 tbsp sugar
  • 1/4 tsp celery seed
  • 1/4 tsp dried oregano
  • Salt & Pepper

Soda bread croutons

  • 3 soda bread, halved
  • 100g Dromona Mature Cheddar, grated

How It’s Done:

  1. In a large saucepan, melt  the butter and olive oil. Add the onion and garlic and cook over medium heat, until softened.
  2. Add the tomatoes, stock, cream, sugar, celery seed and oregano and season.
  3. Bring the soup to a boil over high heat. Reduce the heat and simmer for 10 minutes.
  4. Blitz the soup until smooth.
  5. Meanwhile, preheat the grill to high and lightly toast the soda bread. Sprinkle with the cheese and grill for 2-3 mins until the cheese is bubbling.
  6. Place the cheesy crouton on top of the soup and enjoy
