Darragh’s Cheesy Stuffed Bread with Spinach and Sun Dried Tomato
This quick and easy lunch is perfect for a summer picnic, or a tasty lunch at home. What is there not to like!

You will need a small mixing bowl.
Ingredients
- 4 par-baked bread rolls
- 100g Dromona cheddar, grated
- 2 tbsp double cream
- 8 sundried tomatoes – chopped into small pieces
- Handful of spinach, roughly torn

How It’s Done:
- Using a sharp knife, cut out an oblong hole from the top of the rolls. Scoop out the bread, ensuring you don’t pierce the bottom of the rolls. Place the rolls on a baking tray.
- In a bowl, mix together the cheddar, mozzarella, cream, salt, pepper, sun dried tomatoes and spinach.
- Spoon this mixture into the bread. Sprinkle on some breadcrumbs. (Using the leftover bread)
- Place in the oven and bake for 10 minutes, until the top is golden brown.
