Darragh’s Caramelised Red Onion Butter

Treat your special someone this Valentine’s Day with this simple Caramelised Red Onion Butter!

You will need a Frying Pan

 

Ingredients

  • 200g Dromona Butter at room temperature
  • Tbsp olive oil
  • 2 red onions, finely sliced
  • 1 tsp thyme, chopped
  • 1 tbsp soft brown sugar
  • 4 tbsp balsamic vinegar

Made for sharing:

Perfect with steak, fish or even spread over toast.. if you can resist!

How It’s Done:

  1. Heat the oil in a lidded frying pan over a low heat and add the red onions and thyme. Cover and cook for 15-20 mins, stirring occasionally so they don’t catch, until soft and slightly golden.
  2. Remove the lid, reduce the heat to low and stir through the sugar, vinegar and 2 tbsp water. Cook for a further 5 mins until the liquid has almost disappeared, then allow to cool.
  3. Mix the butter with the onions until fully incorporated.
