Crunchy Croissant Breakfast Sandwiches @keevaeats

You will need a rolling pin, baking paper and a frying pan

Ingredients

per 1 sandwich:

  • 2 croissants (preferably going stale)
  • 2 knobs of @dromonamakesit butter (and a little more for frying the egg)
  • honey (enough to drizzle over each croissant)
  • 2 hash browns
  • 4 generous slices of @dromonamakesit cheddar cheese
  • 1 egg
  • 1 tbsp paprika
  • handful of chives, chopped
  • hot sauce of choice

Made for sharing:

This recipe is super versatile. You can sub in and out breakfast sandwich fillings as you like. We went vegetarian but you could add in bacon if you wanted. Or make the eggs scrambled instead of fried.

How It’s Done:

  1. Roll your croissants out with a rolling pin to about a cm thickness
  2. Cut a square of baking paper big enough to wrap around the croissant (leave a little room but you don’t want it too much bigger as it’ll have to fit in the pan!)
  3. Place a knob of butter in the middle of the bottom half of the baking paper, place the croissant on top of the butter, add another knob of butter on top. Drizzle some honey over the top and fold the baking paper over on top
  4. Place in a dry hot frying pan. Put something heavy on top to keep flat (I used a burger smasher but anything heavy will do!). After a few mins flip to cook the other side
  5. Repeat for the other steps 2-4 for the croissant
  6. Cook your hash browns (I airfryed mine!)
  7. Melt some more butter in a frying pan and add the paprika, swirl to incorporate and add your egg. Cook to your preferred consistency
  8. Build time! Melt the cheese on the bottom croissant under the grill, add on top the hash browns and fried egg. Finish with a drizzle of hot sauce, chives and top with the other croissant – dig in!
