Richard’s Christmas Cottage Pie

you will need a saucepan and a baking dish.

preheat the oven to 200°C

Ingredients

  • 50g Dromona Butter
  • 500ml whole milk
  • 1 bay leaf
  • 50g Plain flour
  • Shredded leftover white turkey meat
  • Shredded leftover ham
  • Leftover root veg, cut into chunks
  • Shredded Leftover Brussel Sprouts
  • Leftover mashed potato mixed with stuffing to top
  • Gravy & cranberry sauce, to serve

How It’s Done:

  1. Add the milk, plain flour, butter and bay leaf into a saucepan.
  2. Place the saucepan over a medium heat and whisk continuously until the butter melts and the sauce is thickened & smooth. Season with salt & pepper. (You’ll want to remove the bay leaf before using)
  3. Mix the shredded turkey meat, ham, root vegetables and shredded sprouts into the white sauce.
  4. When thoroughly mixed, tip into a baking dish and leave to cool.
  5. Once cooled, top the mixture with the mashed potato & stuffing mixture. Smooth out the edges, then fluff the top up with a fork to create ridges.
  6. Bake at 200°C for 30 minutes until golden on top.
  7. Add a big dollop of cranberry sauce into the gravy mix and serve.
