Colm’s Slow Cooker Chicken & Vegetable Soup with a Cheesy Ham Toastie

You will need a slow cooker and a pan.

Ingredients

For the toastie:

  • 2 slices sourdough bread
  • Dromona Spreadeasy
  • Dromona Cheddar
  • Ham

For the soup:

  • 2 large skinless chicken breasts
  • 300g potatoes, diced
  • 2 carrots, diced
  • 2 celery, diced
  • 1 onion, diced
  • 2 garlic cloves
  • 1 bay leaf
  • ½ tsp dried thyme leaves
  • 1½ litres chicken stock

How It’s Done:

For the soup

  1. Add all the ingredients for the soup to a slowcooker and cook on high for 3 hours, ensuring your chicken is fully cooked.
  2. Remove the chicken breasts & shred using to forks in a bowl.
  3. Blend the soup to a consistency you’re happy with. Return the chicken to the soup and mix.
  4. Season with salt and pepper to taste.

For the toastie

  1. Thickly slice your sourdough & butter generously. Top with the ham & cheese ensuring the outsides aren’t missed, sandwich the bread together and press down firmly.
  2. Place in a medium heat non-stick pan for 2-3 mins then flip over. At this stage place a small baking tray on top of the sandwich & top with a heavy weight like a tin of beans For another 2-3 minutes.
  3. Remove from the heat, slice & enjoy with your hearty soup!
