Darragh’s Cheesy Chilli Meatballs

Sink your teeth into our flavourful cheesy chilli meatballs!

You will need a bowl and a large skillet or pan.

Ingredients

  • 350g pork mince
  • 350g beef mince
  • 1½ cumin
  • 1½ coriander
  • 1½ smoked paprika
  • 1 large onion, chopped
  • 3 garlic cloves, crushed
  • 1 tbsp tomato purée
  • 2 × 400g cans chopped tomatoes
  • 2 tsp sugar
  • 1 stock pot/cube
  • 100g Dromona cheddar cheese, grated
  • 1 garlic baguette

How It’s Done:

  1. Combine the mince with all the spices and garlic in a bowl with some salt & pepper, and mix. Take walnut-sized pieces of the mixture and roll into balls
  2.  Heat the oil in a large skillet or pan and add the meatballs on a medium heat to brown.
  3. Add the onions and cooking for 5/6 minutes until soft, then add the tomato purée, chopped tomatoes, sugar then Season with S&P.
  4. Slice the garlic bread and place on top of the meatballs, sprinkle the cheddar on top.
  5. Bake for 15-20 minutes at 180 until golden and crisp.
