TO MAKE THE BURGERS

750G good quality Irish minced beef

1 small onion, finely chopped

2 tsp Dijon mustard

1 tbsp apple cider vinegar

2 tbsp fresh flat leaf parsley, finely chopped

1 egg free range, beaten

Sliced cheese

Baby gem lettuce, separated and washed

2 large tomatoes

1 red onion, thinly sliced rings

Hot red sauce

Made for sharing:

SERVES 4

With a side portion of cheesy sweet potatoes and extra red sauce!

How It’s Done:

  1. Place all the burger ingredients in a large bowl and mix together, season with salt and pepper. Cover and place in the fridge until ready to use, at least one hour.
  2. To make, wet hands and divide burger mix into four and shape into burger patties.
  3. Pre heat the grill. Heat a fry pan or barbecue until hot. Add a little oil to each side of the burgers and cook on each side for 4-5 minutes or until cooked and well browned.
  4. Lightly toast the burger buns. Top the burgers with a couple of Dromona cheese slices and place on a baking tray under the pre heated grill until bubbling and melting.
  5. Stack the burger – on the base of each bun add some hot red sauce, top with lettuce followed by the cheese burgers, sliced tomatoes and red onions before placing the bun lid on.
