You will need a Non stick frying pan
Ingredients
5 eggs, beaten
85g chorizo, diced
50g Dromona cheddar cheese, grated
1 onion, finely diced
1 red chilli, deseeded & finely diced
Knob of Dromona butter
2 pinches of smoked paprika
2 croissants (to serve)

How It’s Done:
In a non stick pan over medium heat melt in your butter, then add onion and chilli. Fry until they begin to brown and soften, then add in the chorizo. Continue frying for another 1-2mins, then turn down the heat to low.
Once the oil has completely sizzling, pour in your beaten eggs. Give them a stir. Season with a pinch of salt.
Keep gently stirring the eggs over very low heat until small curds start to form. Once the eggs start turning to a thicker, custardy texture, take it off the heat, then add the cheese and gently stir. This process should take between 10-15mins.
Place on toasted croissants and a pinch of smoked paprika.
