50g plain flour

750ml whole milk

200ml double cream

1 teaspoon Dijon mustard

300g Dromona Mature Cheddar, grated (plus extra for topping)

Sea salt and freshly ground black pepper

For the Topping

100g pancetta, diced (or smoked bacon lardons)

75g fresh breadcrumbs

2 tablespoons butter

1 tablespoon fresh parsley, finely chopped

30g Dromona Mature Cheddar, grated
