You will need a frying pan, a saucepan and a large bowl
450g smoked cod fillets (unsmoked will work also)
2 bay leaves
150ml milk
350g Maris Piper potatoes
Dromona Butter (for the potatoes)
½ tsp lemon zest, finely grated
1 handful flat leaf parsley, chopped
1 small bunch chives, chopped
50g Dromona Mature Grated
1 tsp dijon mustard
1 egg
flour, for shaping
85g fresh white breadcrumbs, preferably a day or two old
3-4 tbsp vegetable or sunflower oil, for shallow frying
