50g Dromona butter for greasing and frying.

150g smoked bacon or pancetta, chopped

1 small onion or shallot, finely sliced 

1 garlic clove, minced

150ml double cream

100ml milk

2 teaspoons wholegrain or Dijon mustard

160g Dromona Mature Cheddar, grated

Sea salt  and freshly ground black pepper

Pinch of paprika 

300 – 400g leftover cooked Brussels sprouts, halved 

200g leftover stuffing or breadcrumbs
